When you think of Japanese food, things that come to mind would probably be sushi or ramen. But there’s actually a big curry culture in Japan and just like any other cuisine in Japan, Japanese curry is packed with umami. This recipe is the easiest and quickest way for busy folks like you to enjoy this intricate flavor curry has to offer!
SERVINGS: 1 | PREPPING TIME: 10 MIN | COOKING TIME: 10 MIN
- ½ green pepper
- ½ cup mushroom
- ¼ medium onion
- ⅔ cup frozen corn
- 2 cups cooked rice (preferably day old rice)
- 1 Japanese curry roux* (or mix 1 tbsp curry powder and oil)
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 tbsp nutritional yeast
- Salt & pepper
- Chopped green onions for garnish
*Golden Curry is the only vegan brand we could find (this is the brand most generic grocery stores usually carry)
METHOD
Step 1: Chop all vegetables as well as curry roux and set them aside.
Step 2: Heat 1 tbsp of sesame oil in a large skillet over medium heat. Add onions.
Step 3: Once onions are translucent, add green peppers, mushrooms, and frozen corn. Cook till all vegetables are warmed through. (about 3 minutes) Add some salt and pepper as needed.
Step 4: Add in the rice and cut through using a spatula/wooden spoon till rice is evenly scattered and mixed with all ingredients.
Step 5: Sprinkle curry roux over rice evenly and mix carefully.
Step 6: Once curry roux is melted and mixed in, add in nutritional yeast for cheesy flavor.
Step 7: Garnish with chopped green onions.
